12/7/2025: Today began in the low 60s and warmed to the low 70s. Cloudy and drizzly.
Lunch on December 7, 2025 consisted of a fried mixture of eggs and beef chorizo. This was all accompanied by a green salad. El almuerzo del 7 de diciembre de 2025 consistía en una mezcla frita de huevos y chorizo de res. Todo esto estaba acompañado de una ensalada verde. 
The ferns were very happy this afternoon because of the rain. Los helechos estaban muy contentos esta tarde por la lluvia.

Anoche, I cleaned 24 duck eggs for baking. Today, December 9, 2022, I discovered that it’s better to leave them dirty and wash them after baking. (It makes them easier to peel.) The dinner consisted of leftover lamb from the previous night. It was reverse-seared and served with a colorful salad, two slices of Swiss cheese, and a slice of cheese bread. This afternoon I straightened the roof trusses on the north side of Jacobhouse. Esta tarde enderecé las cerchas del techo al norte de mi casita.

Lunch on December 10, 2025 consisted of a fried mixture of duck eggs and lamb. This was accompanied by a green salad made by Padre. El almuerzo del 10 de diciembre de 2025 consistía en una mezcla frita de huevos de pato y cordero. Esto estaba acompañado de una ensalada verde hecha por mi padre. 
After lunch, I worked on the roof of my little house, cutting the battens with a reciprocating saw. Después del almuerzo, trabajé en el techo de mi casita cortando los listones con una sierra recíproca.

On the morning of December 11, 295, I began the process of making beef tallow. En la mañana del 11 de diciembre de 295 comencé el proceso de elaboración de sebo de res. 
Lunch consisted of hard-boiled duck eggs and leftovers of the meat and vegetable mixture I made the other day. All of this was served on a bed of lettuce. El almuerzo consistía en huevos de pato duros y sobras de la mezcla de carne y vegetales que hice el otro día. Todo esto se sirvió sobre una cama de lechuga.

Dinner consisted of two Wagyu hamburgers seared in a pan and topped with Swiss cheese, chopped onion, ketchup, and mustard. There was also a green salad garnished with pickled cucumbers. A photo of the chocolate my brother sent us as a Christmas gift. It was Swiss chocolate, and the taste and texture were excellent. Una foto del chocolate que mi hermano nos envió como un regalo navideño. Era chocolate suizo y el sabor y la textura eran excelentes.

Some cows were in heat in the early morning of December 12, 2025. Algunas vacas en celo en la madrugada del 12 del 12 de 2025. 
After checking on the cows, we conducted the cow that was giving birth to the barn, and there, we helped her calve. Everything went very well. Después de chequear las vacas, conducimos la vaca que estaba pariendo al establo, y allí, ayudamos a ella a parir. Todo salió muy bien.

While I was preparing the fried egg and lamb mixture for lunch, the salt shaker broke and a lot of salt fell into my eggs. I tried to eat them, but they were too salty. 12/13/2025: Today began in the low 40s and warmed into the mid 70s. Sunny and dry.
Lunch on December 13, 2025, followed a rather busy morning. It consisted of sausages, sardines, bacon, and a green salad garnished with slices of pickled cucumber. El almuerzo del 13 de diciembre de 2025 ocurrió después de una mañana bastante ajetreada. Consistía en salchichas, sardinas, tocino y una ensalada verde adornada con rodajas de pepino encurtido. 
The dessert consisted of a sliced red apple sprinkled with cinnamon and served with a spoonful of Greek yogurt. El postre consistía en una manzana roja en rodajas espolvoreada con canela y acompañada de una cucharada de yogur griego.

This afternoon my Padre and I put up a sign that Mr. Brimage made. It says “Welcome.” Esta tarde mi padre y yo instalamos un cartel que hizo el señor Brimage. Dice bienvenido. 
The dinner on December 13, 2025, consisted of small shoulder (chuck tender) roasts from cow number 575 and steer number 3870. We used the leftovers to make sandwiches for lunch tomorrow on the plane. La cena de 13 de diciembre de 2025 consistía en asados de hombro pequeños de vaca número 575 y buey número 3870. Utilizamos las sobras para hacer sandwiches para el almuerzo de mañana en el avión.
Final note: This morning I awoke and performed the daily morning activities of calisthenics, duck-tending, and a beef pasture inspection with Padre. I even was able to give Victor some garden-planting and roof work instructions for if he has time while we are away. It is hard to imagine that, even though I was measuring for battens this morning, by this afternoon, Padre, Madre, and I will be in Puerto Morelos, México.
Note: I would write more about my first adventure into dancing, but it is about time to go, and I’m sure more opportunities will follow. The next lesson is planned for December 23rd.
There was quite a lot to enjoy this past week. New adventures on multiple levels. I’m continually astounded to how much can happen in one week and I think taking the dance class is tremendous.
