Lunch consisted of a mixture of scrambled eggs and Belgian Blue ground beef. This was accompanied by a green salad made by Padre and dressed by Madre. El almuerzo consistía en una mezcla de huevos revueltos y res molida de azul belga. Esta estaba acompañada de una ensalada verde hecha por mi padre y aliñada por mi madre. 
This afternoon, Victor painted the underside of the roof of the Master Blend freezer room. It looks much better than before. Esta tarde, Victor pintó la parte inferior del techo de la carnicería de Master Blend. Se ve mucho mejor que antes.

An afternoon activity: I began to dig the second hole for the foundations of Guesthouse, and I almost cut a DSL internet line. I don’t know if it is the line that goes to Jacobhouse or the line that goes to Madre’s house. Dinner consisted of a Belgian Blue burger-steak encrusted with salt and coffee ground and cooked via skillet. This was accompanied by a green salad made by Padre. Additionally, there was a bowl of a mixture of sour cream and horseradish for dipping. Morning activities, part 1: I made a hole in the wall of Madre’s kitchen container. The outside was easy with a hole-saw drill attachment. Inside, I needed to use a jigsaw. Actividades matutinas, parte 1: Hice un agujero en la pared del contenedor cocina de mi madre. El exterior fue fácil con una sierra hecha específicamente para hacer agujeros. En el interior, necesité utilizar una sierra de vaivén. 
Morning activities, part 2: After making a hole in the wall, I glued some pipes for the cold and hot water. Actividades matutinas, parte 2: Después de hacer el agujero en la pared, encolé unas tuberías para el agua fría y caliente. 
Lunch consisted of a tray of sushi and a bowl of miso soup garnished with avocado, green cabbage, and arugula. El almuerzo consistía en una bandeja de sushi and un tazón de sopa de miso adornada con aguacate, repollo verde y rúcula. 
After lunch, I began to prepare dinner. It consisted of browning some Belgian Blue short ribs and adding: butter, chicken broth, pepperoncini, and Ranch seasoning. 4/9/2024: . Today began in the mid 50s and warmed into the low 80s. Mostly sunny.
I didn’t take photos of today’s lunch (a fried mixture of eggs and beef short rib) or of the preceding morning. I think that I can say the busy day was the culprit. In the morning, I acquired, ordered, put away an entire processed cow into the Master Blend freezers. These are two flatiron steaks we’ll eat for dinner. Yo no tomé fotos del almuerzo de hoy (una mezcla frita de huevos y costillita de res) o de la mañana anterior. Creo que yo puedo decir el día ocupado fue el culpable. En la mañana yo conseguí, ordené y puse una vaca procesada entera en los congeladores de Master Blend. Estos son dos filetes planos de hierro que comeremos para la cena. 
An afternoon activity: I made a shallow trench beside the DSL line in order to move it out of the hole. After that, I refilled the trench. Una actividad por la tarde: Hice una zanja poco profunda al lado de la línea de DSL para quitarla del hoyo. Después de eso, rellené la zanja. 
Dinner: A pan-seared flatiron steak from a 5-year-old F1 Wagyu cow. The steak was very tender and flavorful, and it was well-accompanied by a green salad made by Padre. La cena: Un filete plano de hierro al sartén de una vaca F1 Wagyu de cinco años. El bistec tenía mucha ternura y sabor, y estaba bien acompañada de una ensalada verde hecha por mi padre.

Today’s lunch was similar to yesterday’s: A sausage, some fried eggs, and a green salad made by Padre and dressed by Madre. The flavor of the sausage was ‘Pepperjack cheese and black pepper”, and I liked it quite a lot. El almuerzo de hoy fue muy parecido al de ayer: Una salchicha, unos huevos fritos y una ensalada verde hecha por mi padre y aliñada por mi madre. El sabor de la salchicha era ‘queso pepperjack y pimienta negra’, y me gustó bastante.

Lunch consisted of a fried mixture of eggs and beef short ribs topped with green salsa. This was accompanied by a green salad made by Padre and dressed by Madre. El almuerzo consistía en una mezcla frita de huevos y costillitas de res cubierta con salsa verde. Esta estaba acompañada de una ensalada verde hecha por mi padre y aliñada por mi madre. 
In the afternoon, I saw two skinks hanging out under the leaves. Por la tarde, vi dos eslizones merodeando bajo las hojas. 
Today we moved a concrete column to the Guesthouse lot. Hoy movimos una columna de concreto al lote de Guesthouse.

This dinner consisted of a few pieces of reverse-seared Wagyu rump roast accompanied by a salad of spring mix, arugula and tomato drizzled with balsamic vinaigrette. Plus, there was a bowl of homemade barbecue sauce for dipping. Lunch consisted of fried Wagyu ground beef atop a salad of lettuce, cabbage, avocado, banana peppers, and homemade barbecue sauce. The beef had a lot of fat, but it was very flavorful. El almuerzo consistía en res molida frita de Wagyu encima de una ensalada de lechuga, repollo, aguacate, pimientos enfrascados y salsa barbacoa casera. La res tenía mucha grasa, pero estaba muy sabrosa. 
An afternoon activity: I made a beef box for some customers in Ocala. They are going to get it later this week. Una actividad por la tarde: Yo hice una caja de res para unos clientes en Ocala. Ellos van a conseguirla más adelante esta semana. 
I’m giving my lower back a rest, so I only removed one bucket of dirt from the holes today. Estoy dando un descanso a mi espalda baja, así que solo quité una cubeta de tierra de los hoyos hoy. 
Tonight, I made queso-fresco-stuffed plantains sprinkled with cinnamon and topped with fried eggs. It was my comadre, Lunita’s, idea to add cinnamon, and really, that made the dish very unique and quite delicious. Esta noche hice plátanos rellenos con queso fresco espolvoreados con canela y cubiertos con huevos fritos. Fue la idea de mi comadre, Lunita, agregar la canela y, realmente, eso hizo que el plato fuera muy único y bastante sabroso. 
The plated dinner: A queso fresco-stuffed plantain sprinkled with a little bit of cinnamon and topped with a fried egg. To accompany all of this, there was a sliced avocado and a salad made by Padre. It was an adventure for the tongue. La cena emplatada: Un plátano relleno con queso fresco espolvoreado con un poco de canela y cubierto con un huevo frito. Para acompañar todo esto, había aguacate en rodajas y una ensalada verde hecha por mi padre. Fue una aventura para la lengua.

Final Note: It was a week of adventures for all the senses. Also, I must say that the skink up top sure looks happy.
Quite week yet again, if your back says give me a rest for a few days no problem, a few buckets keeps the project moving forward I can appreciate that… Incredible food once again, truly a pleasure to be a part of the ‘Jacobjourney’
