Week of March 8, 2026 – Spring forward, windows for Guesthouse, a ‘peasful’ abode, treasure hunting, & a recipe for Ray’s coconut cookies.

3/8/2026: Today began in the high 60s and warmed into the 80s. Foggy & partly cloudy morning ensued by a sunny afternoon.

3/9/2026: Today began in the high 60s and warmed into the 80s. Mostly sunny morning.

3/10/2026: Today began in the low 60s and warmed into the mid 80s. Quite sunny.

3/11/2026: Today began in the mid 60s and warmed into the mid 80s. Mostly sunny.

3/12/2026: Today began in the high 60s and warmed into the high 70s. Cloudy morning.

3/13/2026: Today began in the high 50s and warmed into the high 70s. Mostly sunny.

3/14/2026: Today began in the mid-60s and warmed into the high 70s. Mostly cloudy morning followed by a mostly sunny afternoon.

Final Note: This weekend, at the store, I received even more compliments about the Ray-inspired macaroons. I have since realized that the only place I had the recipe written down was on my telephone. So, I’m writing it down here (and in 1-4) to save it for posterity. It may eventually make it’s way onto the Master Blend Cattle Co. website as well. It is simple:

Ray's Macaroon's
- 3 cups shredded coconut, unsweetened (I like Anthony's Organic Shredded & Unsweetened coconut)
- 1 can condensed milk, unsweetened
- 1/2 cup Splenda
- 2 eggs (duck eggs if possible)
- 1/2 tsp salt
- 1 tbsp loquat or vanilla extract

1. Preheat oven to 350 F.
2. Mix everything together and let it set for about 5 minutes (to absorb all milk).
3. Put ~1-1.5 tbsp balls or 'cylinders' of dough on sheet pan lined with parchment paper, evenly spread.
4. Cook at 350 F for 18 mins on sheet pan with parchment paper. Swap shelves in the middle if using two pans.
5. Let cool and enjoy.
