This is the eye of round roast that I prepared for dinner on December 1, 2024. I seasoned it with olive oil, balsamic vinegar infused with bourbon, salt, black pepper and Sicilian spices. In the early morning of 12/3/2024, I did my blog work at the airport. En la madrugada del 3 de 12 de 2024, yo hice mi trabajo de blog en el aeropuerto. 
On the first flight, I had plenty of legroom. It was probably the most comfortable flight of my life. En el primer vuelo, yo tenía mucho espacio para mis piernas. Probablamente fue el vuelo más comodo de mi vida. 
We arrived at the Grand Park Royal hotel at 2:30 in the afternoon. The sea was shining in the sun. Llegamos al hotel Grand Park Royale a las 2:30 en la tarde. El mar brillaba en el sol. 
For lunch, we ate at the Grand Park Royale buffet. My favorite meal there was the pork stew. It had lots of peppers and lots of meat. Para el almuerzo, comimos en el buffet de Grand Park Royale. Mi comida favorita allí fue el guiso de cerdo. Tenía muchos pimientos y mucha carne. 
This is the dried octopus my brother brought me from Japan. It has a good taste but the texture is not so good. Este es el pulpo seco que mi hermano me trajo de Japó. Tiene un buen sabor pero la textura no es tan buena. (Requiere mucha masticación.)

The second course was seafood meatballs. They had a good flavour and a great texture (soft, like the meatballs that Betty Ortona made years ago). El segundo plato consistía en albóndigas de marisco. The main course was a beef fillet stuffed with aged beef. It was accompanied by polenta, asparagus, and gravy. El plato principal fue un filete de res relleno con res añejada. Estaba acompañado de polenta, espárragos, y jugo de carne. 
The dessert was tiramisu. I think this is the best dessert at Grand Park Royale. El postre consistía en tiramisú. Creo que este es el mejor postre de Grand Park Royale.

On the morning of 4/12/2024, we went to Puerto Vallarta by taxi. I sat in the front while my parents and brother sat in the back. En la mañana del 4 de 12 de 2024, fuimos a Puerto Vallarta por taxi. Me senté adelante mientras mis padres y mi hermano se sentaron atrás. 
At noon we left for Puerto Vallarta. The day was very sunny but the air was pleasant and refreshing. En el mediodía salimos para Puerto Vallarta. El día estaba muy soleado pero el aire estaba agradable y refrescante. 
We had lunch at a restaurant called Pepe’s Taco. There I had 5 tacos al pastor and 3 chorizo tacos. It was a great feast with my family. Almorzamos en el restaurante llamado Pepe’s Taco. Allí comí 5 tacos al pastor y 3 tacos de chorizo. Fue un gran fiesta con mi familia.

Tonight we had dinner again at the hotel’s Italian restaurant. The first course was a salad from the salad bar. Esta noche, volvimos a cenar en el restaurante italiano del hotel. El primer plato fue una ensalada del buffet de ensaladas. 
The main dish was noodles in a spicy sauce. It tasted great and felt great in my stomach after spending so much time at sea. El plato principal fue fideos en una salsa picante. Tenía un sabor y una sensación excelente en el estómago después de que pasé tanto tiempo en el mar.

Lunch consisted of a big salad and a mixture of octopus al pastor with roasted peppers. Everything was very tasty. I also need to note here that I had some fish covered in lots of butter. That fish had a lot of flavor but caused a bit of stress on the intestines. I recovered quickly, but I don’t think I’ll be eating it tomorrow. El almuerzo consistía en una gran ensalada y una mezcla de pulpo al pastor con pimientos asados. Todo estaba muy sabroso. También necesito notar aquí que comí un poco de pescado cubierto con mucha mantequilla. Ese pescado tenía mucho sabor pero causó un poco de éstres en los intestinos. I had tiramisu for dessert again. It’s my favorite dessert here. Volví a comer tiramisú de postre. Es mi postre favorito de aquí.

12/7/2024: Today began in the high 60s and warmed into the low 80s. Mostly cloudy.
Yesterday was a travel day, so here’s a summary of 7/12/2024: Today was a relatively normal day. I woke up at 8am, played cards with Padre, and had tacos from Pepe’s Taxo with my family at 1. After returning to the hotel, I slept a little and then swam with my family in Banderas Bay. The water was pretty cold so we didn’t swim for long. It was fun, though. For dinner, we went to the Italian restaurant at the Grand Park Royale. We ended the night with some card games. It was a great day, and I really don’t think it could have done better.
Ayer fue un día de viaje, así que va un resumen del 7/12/2024: Hoy fue un día relativamente normal para unas vacaciones. Me despertí a las 8 de la mañana, jugué cartas con mi padre y comí tacos de Pepe’s Taxo con mi familia a la 1. Después de regresar al hotel, dormí un poco y luego nadé con mi familia en la Bahía de Banderas. El agua estaba bastante fría así no nadamos por mucho tiempo. Sin embargo, fue divertido. Para la cena, en el restaurante Italiano de Hotel Grand Park Royale. Terminamos la noche con unas juegos de cartas. Fue un día excelente, y realmente, no creo que pudiera hacerlo mejor.

12/8/2024: Today began in the low 70s and warmed into the mid 80s. Mostly sunny. Quite dry. Arrival in Florida was marked by 60 degree weather. Also dry, but too late for sun.
I’m catching up on life since vacation, so today I’ll do a recap of 8/12/2024: The morning was pretty normal. I woke up at 8, did the exercises, and took a shower. Then I played cards with my dad and we walked along the ocean. The next step was to say goodbye to Grand Park Royale. I took pictures and video of Puerto Vallarta as we drove to the airport. After that, the day was one long wait. Two flights and a car ride brought us home. It was a long but easy trip.
Me estoy poniendo al día con la vida desde las vacaciones, así que hoy haré un resumen del 8 de 12 de 2024: La mañana fue bastante normal. Me desperté a las 8, hice los ejercicios y me duché. Luego jugué cartas con mi padre y caminamos a lo largo del océano. El siguiente paso fue decir adiós a Grand Park Royale. Tomé fotos y grabé un vídeo de Puerto Vallarta mientras conducíamos al aeropuerto. Después de eso, el día fue una gran espera. Dos vuelos y un viaje en carro nos llevaron a casa. Fue un viaje largo pero fácil.

This morning my father, uncle, Victor, Brimage and I spent time trying to repair the red feed wagon. Unfortunately, it had a broken shaft, so we needed to replace it with another wagon. 12/11/2024: Today began in the mid 60s with a little bit of rain. Warmed into the low 70s and then cooled into the 30s in the night.
Lunch on 11/12/2024 consisted of a sautéed egg and zatar mixture. This was accompanied by a spoonful of a colorful salad made by Padre. El almuerzo del 11 de 12 de 2024 consistía en una mezcla de huevos zatar salteada. Esta estaba acompañada de una cucharada de una ensalada colorida hecha por mi padre.

Lunch consisted of a “no-carb pizza.” It was actually a mix of ground Belgian blue beef, egg, mozzarella, and green pepper. El almuerzo consistía en una “pizza sin carbohidratos”. En realidad, fue una mezcla de res molida de azul belga, huevo, mozzarella y pimiento verde.

Lunch consisted of a fried mixture of leftover ground Belgian blue beef and eggs. This mixture was accompanied by a green salad made by my father. El almuerzo consistía en una mezcla frita de sobras de res molida de azul belga y huevos. Esta mezcla estaba acompañada de una ensalada verde hecha por mi padre. 
This is Betty the Belgian Blue, she is very friendly and wants me to pet her. Esta es Betty La azul belga ella es muy simpática y quiere que yo la acaricie. 
This afternoon I did some work on the roof of the Guesthouse – I attached some boards from the east posts to the center posts to make sure they were all the same distance apart. Esta tarde trabajé un poco en el techo de Guesthouse: fijé unas tablas de los postes al este a los postes del centro para assegurarme de que todos estuvieran a la misma distancia. 
Dinner consisted of pan-seared Wagyu round steak on a bed of rice and accompanied by a green salad topped with pecorino cheese and tomato. La cena consistía en bistec de ronda de Wagyu a la sartén encima de un lecho de arroz y acompañado de una ensalada verde cubierta con queso pecorino y tomate.
12/14/2024: Today began in the low 50s and warmed into the mid 70s. Partly cloudy.
Lunch of 12/14/2024 consisted of a rich mixture of eggs and leftover beef. This mixture was accompanied by a green salad made by Padre. El almuerzo del 14/12/2024 consistía en una mezcla rica de huevos y res sobrante. Esta mezcla estaba acompañada de una ensalada verde hecho por mi padre. 
The afternoon of 12/14/2024: There was a parhelion (sun dog) in the sky. La tarde del 14 de 12 de 2024: Había un parhelio en el cielo. 
I did a little more work on the guest house. I attached two more boards to strengthen the east posts while I’m installing the roof trusses. Trabajé un poquito más en el casa de huéspedes. Fijé dos tablas más para fortalecer los postes al este mientras estoy instalando las armaduras del techo. 
Dinner consisted of a Belgian blue ground beef steak topped with avocado. This steak was accompanied by a green salad and some slices of Swiss cheese. La cena consistía en un bistec de res molida de azul belga cubierto con aguacate. Este bistec estaba acompañada de una ensalada verde y algunas rodajas de queso suizo.

Final Note: So, what does happen in 2 weeks? I finished school, there was Guesthouse progress (panel box installed outside of house and truss work commenced), the bus has been cleared of its seats, I’ve gotten a cold and convalesced, there was plenty of farming (broken feed wagon day) and writing, and quite obviously – as shown by over half a hundred photos, there was a tremendous trip to Puerto Vallarta with Padre, Madre, and my brother.
On another note, I’ve been reading “The Story of Philosophy” by Will Durant, and I came across something written about Francis Bacon that I found to be quite interesting: “Bacon thinks the body should be inured to excesses as well as to restraint; else even a moment of unrestraint may ruin it. (E.g. By seeking a road closer to the middle, one does not become so accustomed to the purest and most digestible foods that the body is upset when necessity diverts him/her from perfection.)”
Update (9:46 AM on 12/15/2024): I was reading a little bit more “Story of Philosophy” last night and found another Bacon-ism to appreciate. “Chance is the name of a thing that does not exist, and what chance is in the universe, so will is in man.” The fellow goes so straight to the point at times that it seems a bit brutal.
That was an incredible two weeks, going through your blog was like stepping back in time and reliving some of the experiences. I say Puerta Vallarta again in the near future. Thanks for sharing all this. And yes Bacon was just a bit pointed in his thoughts.
