A type of birria beef that consisted of Belgian Blue shoulder, a summer squash, a mashed clove of garlic, and some chiltepin peppers. Un tipo de res de birria que constaba de res de hombro de Azul Belga, una calabaza de verano, un diente majado de ajo, y unos chiltepines. 
A salad that consisted of the birria beef, lettuces, spinach, avocado, sour cream, and taquera salsa. Un ensalada que consistía de la res birria, lechugas, espinaca, aguacate, crema ácida, y salsa taquera.

Dinner consisted of a Belgian Blue bottom round roast. This beef was accompanied by a green salad made by Padre, a bowl of sour cream for dipping, and a glass of red wine. All of the food was fantastic. La cena consistía de una asada de pierna de Azul Belga. Esta res estaba acompañada de una ensalada verde hecha por mi padre, de una bol de crema ácida para mojar, y de una copa de vino tinto. Toda la comida estuvo fantástica.

This is a piece of Sans’ chicken & BBQ pizza. all of the ingredients were delicious, but my favorite part was the crust. The flavor was almost like butter. After a morning on the river, this pizza was a good solution to our hunger. Este es un pedazo del pizza de pollo y BBQ de Sans. Todos los ingredientes estuvieron deliciosos, pero mi parte favorito fue la corteza. El sabor fue casi como mantequilla. Después de una mañana en el río, esta pizza fue una buena solución a nuestro hambre.

6/15/2023: Today began in the low 70s and warmed into the high 80s. Cooled back into the low 70s in the afternoon.

Padre, Madre, and I tried to go to Latinos y Más for lunch, but there were too many people. After that, we tried to lunch at La Hacienda Colombiana #2, but it was closed. Because of that, we ate lunch at home. I enjoyed a fried mixture of eggs, fresh tomatoes, leftover beef, and spices accompanied by a salad made by Padre and Madre. Mis padres y yo intentamos a ir a Latinos y Más para almorzar, pero había demasiado gente. Después de eso, intentamos a almorzar en La Hacienda Colombiana #2, pero ese restaurante estuvo cerrado. Por eso, almorzamos en casa. Yo disfruté una mezlca frita de huevos, tomates frescos, res sobrante, queso mozzarella, y especias acompañada de una ensalada hecha por mis papás.

Dinner consisted of two oven-roasted fillets of salmon, an oven-roasted fillet of tuna, some roasted okra, and a salad of cucumbers, red cabbage, carrot, and olives in a tangy vinaigrette. La cena consistía de dos filetes de salmón al horno, un filete de atún al horno, algún quimbombó asado, y una ensalada de pepino, repollo rojo, zanahoria, pimiento asado, y olivas en una vinagreta ácida. 
A dessert of “Cosmic Crisp” apple accompanied by a halved strawberry and a dollop of Greek yogurt, all of which were sprinkled with cinnamon. Un postre de manzana “Crujiente del Cosmos” acompañada de una fresa en mitadas y una cucharada de yogur griego, todos de cuales estaban espolvoreado con canela.
6/16/2023: Today began in the low 70s and warmed into the mid 80s. Mostly cloudy.

After early farm activities, I prepared a Belgian Blue roast for dinner. The fresh spices included thyme, garlic, and rosemary. The dried spices included chiltepin, black pepper, and salt. Después de las actividades tempranos del rancho, yo preparé una asada de Azul Belga para la cena. Las especias frescas incluyó tomillo, ajo, y romero. Las especias secas incluyó chiltepine, pimienta negra, y sal. 
For lunch, Padre, Madre, and I went to Latinos y Más. There, I enjoyed talking with the people and eating the avocado salad with a grouper fillet and some chips with salsa. Para almorzar, mis padres y yo fuimos a Latinos y Más. Allí, yo disfruté hablar con la gente y comer la ensalada aguacate con un filete de mero y unos totopos con salsa.

Dinner consisted of a Belgian Blue roast that tasted like a pork loin. This meat was accompanied by a salad of cucumber, avocado, tomato, and red cabbage, a bowl of BBQ sauce for dipping, and a glass of red wine (merlot). La cena consistía de una asada de Azul Belga que supo a un lomo de cerdo. Esta carne estaba acompañada de una ensalada de pepino, aguacate, tomate, y repollo rojo, un bol de salsa barbacoa para mojar, y una copa de vino tinto (merlot). 
A dessert of sliced Granny Smith apple sprinkled with cinnamon and accompanied by a spoonful of Greek yogurt. Un postre de manzana “Abuela Smith” en rodajas, espolvoreada con canela y acompañada de una cucharada de yogur griego.

For dinner, I made a large pizza with a sourdough crust. It was topped with: tomato from the garden, mozzarella, homemade sauce, Parmesan Reggiano cheese, and dried oregano. Para la cena, yo cociné una pizza grande con una corteza de masa madre. Estaba cubierta con: tomate del jardín, queso mozzarella, salsa hecha en casa, queso parmesano, y orégano seco. 
Dinner plated: The pizza was accompanied by a simple salad of lettuce, red cabbage, olive oil, and vinegar. La comida emplatada: La pizza estaba acompañada de una ensalada simple de lechuga, repollo rojo, aceite de oliva, y vinagre. 
An enjoyable dessert of a Granny Smith apple and some red grapes accompanied by a spoonful of Greek yogurt and sprinkled with cinnamon. Un postre disfrutable de manzana “Abuela Smith” y unas uvas rojas acompañadas de una cucharada de yogur Griego y espolovreadas con canela.
Final Note: I wonder how one would write & say Ritsabittle in Spanish. Seeing as it has Italian roots, it would be quite similar, and it would retain its gender (possibly masculine… because travel, flight, car, train, boat, airplane, hotel, restaurant, lake, river, sea, and ocean are all masculine). So, I’ll just say:
(el) ritsabitle [reets-ah-beet-leh] (sustantivo): Un viaje que intencionadamente está tomado para la oportunidad a hacer experiencias nuevas o diferentes.
