A morning activity: Padre and I gave a calf hydrating fluids to balance the acidity of its blood. Una actividad matutina: mi padre y yo le dimos líquidos hidratantes a una ternera para equilibrar la acidez de su sangre. 
Lunch consisted of a fried mixture of eggs and leftover taco beef. This mixture was accompanied by a green salad made by Padre. El almuerzo consistía en una mezcla frita de huevos y sobras de res de taco. Esta mezcla estaba acompañada de una ensalada verde hecha por mi padre. 
Dessert: some pieces of papaya accompanied by two slices of lime. El postre: unos trozos de papaya acompañados de dos rodajas de limón verde. 
This is a papaya that I cut on the afternoon of 12/29/2024. It was the “Christmas papaya”. Esta es una papaya que corté en la tarde del 29 de 12 de 2024. Era la “papaya navideña”.

Dinner was a reverse-seared Belgian Blue burger-steak, accompanied by a baked potato topped with sour cream and tomme cheese. There was also a green salad drizzled with balsamic vinaigrette. This is a sushi platter accompanied by a bowl of miso soup garnished with red cabbage, avocado and some arugula from my garden. Esta es una bandeja de sushi acompañada de un tazón de sopa de mizo adornada con repollo rojo, aguacate y un poco de rúcula de mi jardín. 
In the afternoon I installed almost 25 hurricane clips on the roof of the Guesthouse. En la tarde instalé casi 25 clips antihuracanes en el techo de Guesthouse. 
This morning I added a board to keep the cows from pushing this gate behind the post. Esta mañana agregué una tabla para evitar que las vacas empujen esta puerta detrás del poste. 
Dinner consisted of a green salad topped with pan-seared ground Wagyu beef, avocado, and homemade BBQ sauce. La cena consistía en una ensalada verde cubierta con res molida de Wagyu a la sartén, aguacate y salsa barbacoa casera. 
This is a pear my brother gave us. I sliced it, sprinkled it with cinnamon, and served it with a dollop of Greek yogurt. Esta es una pera que nos regaló mi hermano. La corté en rodajas, la espolvoreé con canela y la serví con una cucharada de yogur griego.

For lunch I had a beef sausage stuffed with cheddar cheese and jalapeno. This sausage was accompanied by a green salad topped with slices of hard-boiled egg. Para el almuerzo comí una salchicha de res rellena de queso cheddar y jalapeño. Esta salchicha estaba acompañada de una ensalada verde cubierta con rodajas de huevo duro.

Dinner was the same as the night before, consisting of Mississippi-style beef stew, a piece of toast, and a coleslaw. La cena fue la misma que la de la noche anterior. Consistía en guiso de res al estilo Mississippi, un trozo de pan tostada y una ensalada de repollo.

This morning I made apple puff pastries. To make them, I used dough made from semolina flour. That’s why they had a very soft texture. Esta mañana hice hojaldres de manzana. Para hacerlos, utilicé masa hecha de harina de sémola. Por eso, tenían una textura muy suave. 
Lunch consisted of a fried mixture of eggs and leftover Mississippi-style stew. This mixture was accompanied by a green salad made by Padre. El almuerzo consistía en una mezcla frita de huevos y sobras del guiso al estilo Mississippi. Esta mezcla estaba acompañada de una ensalada verde hecha por mi padre. 
This afternoon I added one more truss to the southwestmost side of the Guesthouse roof. Esta tarde agregué una cercha más al lado más suroeste del techo de Guesthouse. 
Dinner consisted of a burger-steak encrusted with coffee and salt and topped with a slice of Swiss cheese. This steak was accompanied by a salad of arugula, cabbage and carrot. La cena consistía en un bistec de res molida incrustado con café y sal y cubierto con una rodaja de queso suizo. Este bistéc estaba acompañada de una ensalada de rúcula, repollo y zanahoria.

Final note for the ending of 2024 and the beginning of 2025: Relish the process. Habitually making an effort to enjoy the here and now is the best way to ensure that one does the same in the future.
