8/11/2024: Today began in the mid 70s and warmed into the mid 90s. No rain (or very little). Quite hot.
Lunch of 8/11/2024 consisted of a romaine lettuce and red cabbage salad topped with pan-seared Belgian Blue ground beef, banana peppers, avocado, olive oil, and homemade barbecue sauce. El almuerzo del 11/8/2024 consistía en una ensalada de lechuga romana y repollo rojo cubierta con res molida de azul belga a la sartén, pimientos amarillos enfrascados, aguacate, aceite de oliva y salsa barbacoa casera. 
In the afternoon of 8/11/2024, the cows were hiding from the sun under the oak trees. En la tarde del 11/8/2024, las vacas se escondían del sol bajo los robles. 
The pizza of 8/11/2024’s dinner consisted of a sourdough crust covered with homemade tomato sauce and homemade mozzarella curd. It was very delicious. La pizza de la cena del 11/8/2024 consistía en una corteza de masa madre cubierta con salsa de tomate casera y cuajada de mozzarella casera. Estaba muy rica. 
The plated dinner: A piece of cheese pizza accompanied by a salad drizzled with balsamic vinaigrette. La cena emplatada: Un trozo de pizza de queso acompañado de una ensalada rociada con vinagreta balsámica. 
Dessert: The final peach, sliced and accompanied by a spoonful of Greek yogurt. El postre: El último durazno en rodajas acompañado de una cucharada de yogur griego.

8/12/2024: Today began in the mid 70s and warmed into the low 90s. Early rains made the afternoon quite hot and humid.
This morning (of 8/12/2024), I installed a vent in Madre’s kitchen container. It turned out quite well. Esta mañana (de 12/8/2024), instalé un respiradero en el contenedor cocina de mi madre. Salió bastante bien.

Before finishing the morning work, I connected the wires in the fan that will be used in Madre’s kitchen. Antes de terminar el trabajo matutino, yo conecté los cables al ventilador que se utilizará en la cocina de mi madre. 
Lunch consisted of a tray of sushi accompanied by a bowl of miso soup garnished with red cabbage, avocado, spinach, and a slice of lime. El almuerzo consistía en una bandeja de sushi acompañada de un tazón de sopa de miso adornada con repollo rojo, aguacate, espinaca y una rodaja de limón.

The plated dinner: A reverse-seared Belgian Blue short rib, a fried mozzarella curd, and a green salad made by Padre. La cena emplatada: Una costilla de azul belga dorada al revés, una cuajada de mozzarella frita y una ensalada verde hecha por mi padre.
8/13/2024: Today began in the mid 70s and warmed into the mid 90s. Quite hot.
The dawn of 8/13/2024 in the southeasternmost pasture of the farm. El amanecer del 13/8/2024 en el campo al más sureste del rancho. 
Lunch: A fried mixture of eggs, dried beef, and mozzarella curd. This delicious fare was accompanied by a green salad. El almuerzo: Una mezcla frita de huevos, res seca y cuajada de mozzarella. Este delicioso plato estaba acompañado de una ensalada verde. 
I prepared this meat in order to make meatballs later in the day. Preparé esta carne para hacer albóndigas más tarde en el día.

I tried to make a friend’s meatball recipe, but they flattened while they were cooking. So, I put them in a casserole dish and covered it with mozzarella. This is the result. Lunch consisted of a piece of last night’s “lasagna” accompanied by a green salad topped with sliced hard-baked eggs and drizzled with a balsamic vinaigrette. El almuerzo consistía en un trozo de la “lasaña” de la noche anterior acompañado de una ensalada verde cubierta con huevos duros en rodajas y rociada con vinagreta balsámica.

This is the latest update of the Guesthouse plan. I needed to arrange it so the guests can enter and park to the north side of the container (the north is to the right side). Esta es la última actualización del plan del Guesthouse. Necesité arreglarlo así que los huéspedes pudieran entrar y estacionarse al lado norte del contenedor (el norte está en el lado derecho). 
The plated dinner: A reverse-seared Belgian blue short rib accompanied by some sweet potato fries, a cabbage salad, a bowl of homemade barbecue sauce, and a horn of red wine. La cena emplatada: Una costillita de azul belga dorada al revés acompañada de algunas batatas fritas, una ensalada de repollo, un tazón de salsa barbacoa casera y un cuerno de vino tinto.

8/15/2024: Today began in the mid 70s and warmed into the low 90s. Midday rains led to a cloudy afternoon. Relatively cool at the end of the day.

The plated dinner: A stew of Wagyu beef and roasted potatoes in a tomato sauce (similar to barbecue sauce) topped with sliced avocado and accompanied by a green salad. This salad was dressed with leftovers from last night’s cabbage slaw. La cena emplatada: Un guizo de res de Wagyu y papas asadas en una salsa de tomate (similar a salsa barbacoa) cubierto con rodajas de aguacate y acompañado de una ensalada verde. Esta ensalada estaba aderezada con sobras de la ensalada de repollo de la noche anterior.

8/16/2024: Today began in the high 60s and warmed into the high 80s. Relatively cool for mid-August.

Lunch consisted of vegetables topped with a beef stew, potato and mozzarella curd. El almuerzo consistía en verduras cubiertos con un guiso de res, patata y cuajada de mozzarella. 
This afternoon, I found a new calf in this grass. I found it because I saw the way the grass was flattened. Esta tarde, encontré un nuevo ternerito en este césped. Yo lo encontré porque vi la manera en que estaba aplastado el césped. 
A spring mix salad topped with sliced hard-boiled egg and beef croutons. The salad was also drizzled with a tangy vinaigrette. Una ensalada de mezcla primavera cubierta con huevo duro en rodajas y crotones de res. Además, la ensalada estaba rociada con una vinagreta ácida. 
A plate of red apple, green grapes and Greek yogurt sprinkled with cinnamon and arranged in the shape of a flower. Un plato de manzana roja, uvas verdes y yogur griego espolvoreado con canela y arreglado en forma de una flor. 
The Moon visited me in front of my little house last night (8/16/23). La Luna me visitó frente a mi casita anoche (16/8/23).
8/17/2024: Today began in the high 60s and warmed into the mid 80s. Again, quite cool for an August day.
Lunch of 8/17/2024 consisted of Wagyu Italian Sausage topped with mustard and accompanied by a salad of red cabbage, green cabbage, carrot, and banana peppers. El almuerzo del 17/8/2024 consistía en salchicha italiana de Wagyu cubierta con mostaza y acompañada de una ensalada de repollo rojo, repollo verde, zanahoria y pimientos amarillos enfrascados.

While we were checking the cows this afternoon, we saw three Sandhill cranes. Mientras chequeábamos las vacas esta tarde, vimos tres grullas Sandhills. 
An afternoon activity: I filled sixteen bags with compost for the Moo-Magic stand. Una actividad por la tarde: Llené dieciséis bolsas con abono para el puesto de Moo-Magic. 
Dinner: A reverse-seared coffee & salt-encrusted Belgian Blue burger-steak. This was accompanied by a green salad and a bowl of sour cream for dipping, and it was topped with homemade butter. La cena: Un bistec de res molida de azul belga incrustado con sal y café, dorado al revés. Este estaba acompañado de una ensalada verde y un tazón de crema ácida para mojar y estaba cubierto con mantequilla casera. 
Dessert: A sliced red apple sprinkled with cinnamon and accompanied by some green grapes a dollop of Greek yogurt. El postre: Una manzana roja en rodajas espolvoreada con canela y acompañada de algunas uvas verde y una cucharada de yogur griego.
Final Note: It’s good to remember that one need not wait until a predicament arises to make a change. Changes may also be made in the name of pursuing new and/or positive experiences. I believe this would be the difference between reaction and proaction. Proactivity is a very positive thing.
