Week of April 6, 2025 – East roof in place, a low spring, & roselle cookies

4/6/2025: Today began in the high 60s and warmed into the mid 80s. Sunny and breezy.

4/7/2025: Today began in the high 60s and warmed into the 80s. Dry and dusty until the evening when it rained just over an inch.

4/8/2025: Today began in the low 60s and warmed into the 70s. Mostly cloudy morning. Sunny afternoon.

4/9/2025: Today began in the high 50s and warmed into the high 70s. Sunny and breezy.

4/10/2025: Today began in the high 50s and warmed into the low 80s. Sunny.

4/11/2025: Today began in the mid 50s and warmed into the high 70s. Mostly sunny.

4/12/2025: Today began in the high 50s and warmed into the 70s. Sunny.

Final note: The flavoring for this week’s store-morning cookies was simple yet delectable. I’m including a note here for future reference.

Ingredients:
1/2 cup dry roselle (Jamaican sorrel / Florida cranberry), translates into about 1/4 cup roselle powder
1/4 cup sucralose-based sweetener (baking-formulated Splenda) or other non-sugar sweetener
1 tsp cinnamon

Instruction:
1. Grind the roselle into a fine powder with a blender / stick-blender
2. Mix in the sweetener and cinnamon.
3. Use within pastry cookies or in seltzer water for a sweet and tangy flavor reminiscent of cranberry, red currant, or granny smith apple.
