Week of January 18, 2026 – Hard-baked duck eggs, roof 100% complete, more drinking horns, more IVS, & macaroons.

(Above: An experiment: hard-“boiled” duck eggs baked in the oven. It was a successful experiment. Simply add the parchment paper, crack the eggs into the indentations, and bake them for 25 minutes at 350°F. Un experimento: huevos de pato duros horneados en el horno. Fue un experimento exitoso. Final Note: Yesterday morning I made some plain macaroons for the first time. I used loquat extract as a flavoring, but I think it would work just as well with good vanilla or almond extract. Everyone who tried them said they were excellent, including Ray (and Padre ate four of them for breakfast). I have to agree; the flavor and texture of these cookies were phenomenal. As such, I am including the recipe here, so I have it for posterity. I may end up putting it on the Master Blend website, as well.

Macaroons (No Sugar Added)

Ingredients:
3 cups shredded coconut, unsweetened (Anthony's works well)
1 can condensed milk, unsweetened
1/2 cup Splenda
2 eggs (duck eggs are best)
1 tbsp loquat, almond, or vanilla extract
1/2 tsp salt

Instructions:
1. Preheat oven to 350 F.
2. Mix everything together and let it set for about 5 minutes to absorb all the condensed milk.
3. Use a tablespoon to measure and roll out balls of the batter. Place them on a sheet pan (or two) lined with parchment paper, evenly spread.
4. Cook the macaroons at 350 F for 17 minutes. Swap the pans on the shelves in the middle of the bake to ensure that all the macaroons achieve equal browning on the bottom.
5. Remove the trays from the oven, let the macaroons cool, and then enjoy.
These are some of the macaroons I made to share at the shop this morning (1/24/2026).
