8/10/2025: Today began in the low 70s and warmed into the low 90s. Quite humid and warm.
In the early morning of August 10, 2025, we found the red cow among the sunflowers. En la madrugada del 10 de agosto de 2025 encontramos la vaca roja entre los girasoles. 
Lunch consisted of a fried mixture of eggs and ground beef. This mixture was accompanied by a green salad topped with leftover coleslaw from two days before. El almuerzo consistía en una mezcla frita de huevos y carne molida. Esta mezcla estaba acompañada de una ensalada verde cubierta con sobras de ensalada de repollo de dos días antes. 
These are the hamburger steaks and bacon slices I placed on a sheet pan for baking later in the day. Estos son los bistecs de hamburguesa y los trozos de tocino que coloqué en una bandeja con rejilla para hornear más tarde en el día.

Dinner on August 10, 2025, consisted of a Wagyu burger-steak topped with cheese and two pieces of bacon. To accompany it, there was a green salad, a bowl of homemade barbecue sauce and a horn of red wine. 8/11/2025: Today began in the low 70s and warmed into the low 90s. Quite toasty.
Dawn of August 11, 2025: Padre was going to feed the cows east of Jacobhouse. El amanecer del 11 de agosto de 2025: Mi padre iba a alimentar a las vacas al este de mi casita. 
This morning Padre and Victor hooked up the generator to the water pump (to prepare for the hurricanes coming this season). Esta mañana mi padre y Víctor conectaron el generador a la bomba de agua (para preparar para los huracanes que vienen en esta temporada). 
Lunch consisted of a sushi platter accompanied by a bowl of miso soup garnished with green cabbage, spinach, and avocado. El almuerzo consistía en una bandeja de sushi acompañada de un tazón de sopa de miso adornada con repollo verde espinaca y aguacate. 
After lunch I prepared a Wagyu rump roast for dinner by cutting a pattern into the surface and seasoning it with salt and black pepper. Después del almuerzo preparé una asado de nalga de Wagyu para la cena cortándo un patrón en la superficie y condimentándolo con sal y pimienta negra. 
Dinner consisted of the already shown roast rump accompanied by a green salad topped with two pieces of cheese bread. There was also a bowl of homemade barbecue sauce for dipping. La cena consistía en el asado de nalga ya mostrado acompañado de una ensalada verde cubierta con dos trozos de pan de queso. Además, había un tazón de salsa barbacoa casera para mojar. 
This is a sliced peach that I ate for dessert. Este es un durazno en rodajas que comí como postre.
8/12/2025: Today began in the mid-70s and warmed into the mid 90s.
Lunch on August 12, 2025, consisted of a fried mixture of eggs, bacon, and pepperoncini. It was accompanied by a salad made by my father. El almuerzo del 12 de agosto de 2025 consistía en una mezcla frita de huevos, tocino, y pepperoncini. Esta estaba acompañada de una ensalada hecha por mi padre. 
These are burgers and slices of bacon I prepared for tonight’s dinner. Estas son hamburguesas y trozos de tocino que preparé para la cena esta noche. 
This afternoon I made some roast beef sandwiches and pizzas for travel day (tomorrow). Esta tarde preparé algunos sándwiches de rosbif y pizzas para el día de viaje (mañana).

The dessert consisted of three sliced peaches accompanied by a little red wine. They went very well together. El postre consistía en tres duraznos en rodajas acompañados de un poco de vino tinto. Combinaron muy bien.
8/13/2025: Today began in the mid 70s and warmed into the low 90s. Mostly cloudy in Puerto Vallarta.
On the morning of August 13, 2025, my Padre, Madre, and I went to Mexico. En la mañana del 13 de agosto de 2025, mi padre, mi madre y yo fuimos a México. 
On the flight from Texas to Puerto Vallarta, I had a roast beef sandwich (shown yesterday) with a glass of red wine. Durante el vuelo de Texas a Puerto Vallarta, comí un sándwich de rosbif (mostrado ayer) acompañado de una copa de vino tinto.

8/14/2025: Today began in the high 70s and warmed into the low 90s. Sunny early on, and storms around the mountains. Storms remained around the mountains throughout much of the day, but we experienced very little rain here.
On the morning of August 14, 2025, I played cards with Padre on his balcony. En la mañana del 14 de agosto de 2025, jugué cartas con mi papá en su balcón. 
At noon, my brother checked on his parents. I don’t think he was very impressed. Al mediodía mi hermano revisó a sus padres. No pienso que él estaba muy impresionado.

While we were eating, my mom turned very red due to the hot temperature in the restaurant. Mientras comíamos, mi mamá se volvió muy roja debido a la temperatura calurosa en el restaurante.

Dinner followed a long swim in the ocean. The appetizer consisted of shrimp bisque garnished with a crouton topped with marinated tomato and parsley. La cena ocurrió después de mucho nadando en el mar. La entrada consistía en un bisque de camarónes adornado con un crutón cubierto con tomate marinado y perejíl. 
After that, I had a Greek salad. Después de eso, comí una ensalada griega. 
The main course was duck confit. The meat tasted excellent, and the texture of the mashed potatoes beneath the duck was very pleasant. El plato principal fue un confit de pato. El sabor de la carne estaba excelente y la textura del puré de papas debajo del pato estaba muy agradable. 
Dessert was an apple pie accompanied by a scoop of vanilla ice cream. El postre fue una tarta de manzana acompañada de una cucharada de helado de vainilla. 
After dinner, my brother taught us how to play a card game called Coyote. I liked it because it has a spice theme. Después de cenar, mi hermano nos enseñó a jugar a un juego de cartas se llama Coyote. Me gustó, porque tiene un tema de especias.
8/15/2025: Today began in the mid 70s and warmed into the low 90s. Quite sunny. Some clouds.
(August 15, 2025) This is my morning office at the Sunset Plaza Resort. (15 de agosto de 2025) Esta es mi oficina matutina en el Resort Sunset Plaza. 
The appetizer consisted of a green salad topped with tuna salad and Caesar dressing. La entrada consistía en una ensalada verde cubierta con ensalada de atún y un aliño de César. 
The main course was a pizza with lots of vegetables and olives. It was delicious and quite fresh. El plato principal consistía en una pizza con muchos vegetales y aceitunas. Estaba deliciosa y bastante fresca.

We ate dinner at a Mexican fiesta. I had four tacos al pastor, a crab meat salad, and a green salad. I also enjoyed a creamy sautéed mixture of poblano peppers, onions, and cheese. Comimos la cena en una fiesta mexicana. Yo comí cuatro tacos al pastor, una ensalada de carne de cangrejo y una ensalada verde. Además disfruté una mezcla salteada y cremosa de pimiento poblano, cebolla y queso. 
For dessert we enjoyed a slice of chocolate cake and a slice of red velvet cake. Para el postre disfrutamos un trozo de pastel chocolate y un trozo de pastel red velvet.
8/16/2025: Today began in the mid 70s and warmed into the low 90s. Slightly cloudy and rainy afternoon.
For lunch on August 16, 2025, we ate at Pepe’s Taco again. They didn’t have al pastor tacos today, but the chorizo tacos were excellent. Para el almuerzo del 16 de agosto de 2025 volvimos a comer en el restaurante Pepe’s Taco. No tenían tacos al pastor hoy, pero los tacos de chorizo estaban magníficos.

After eating Pepe’s tacos, we walked to our hotel. Después de comer tacos de Pepe, caminamos hasta nuestro hotel. 
A New York strip steak we found at Soriana. It was much cheaper than the New York strip steaks at Master Blend. Un filete de Nueva York que encontramos en la tienda Soriana. Su precio era mucho menos que los filetes de Nueva York en la tienda de Master Blend.

In the afternoon, we watched a turtle emerge from the sea. It was time to lay her eggs in the sand. En la tarde, miramos una tortuga aparecer del mar. Era hora de poner sus huevos en la arena. 
The starter consisted of a salad with grapefruit drizzled with a citrus vinaigrette. La entrada consistía en una ensalada con toronja rociada con una vinagreta cítrica. 
The main course consisted of noodles in an olive oil and basil dressing. Accompanying the dishes were plenty of seafood: mussels, shrimp, and clams. El plato principal consistía en fideos en un aliño de aceite de oliva y albahaca. Para acompañarlos, había muchos mariscos: mejillones, camarónes y almejas. 
My parents ordered the cannoli. It was orange-flavored. Mis padres pidieron el cannoli. Tenía sabor a naranja. 
The tiramisu was even better than the tiramisu at Grand Park Royale. It had a creamy texture and a slight acidity. El tiramisú era incluso mejor que el tiramisú de Grand Park Royale. Tenía una textura cremosa y un poco de acidéz. 
After dinner, we played a few games of Coyote. In that game, I had a strange hand. Después de cenar, jugamos algunos juegos de Coyote. En ese juego, tenía una mano extraña.
Final Note: As suspected, the office is quite different than last week’s. Also, I don’t think sunsets can get much more unique than that which I observed yesterday.

Quite a world we live in when one can go from farm, fields and feeding to Pepe’s tacos, warm Pacific waters and swimming with sea turtles, not to mention all the other foods and great dinner table conversations… Tremendous.
