Week of June 15, 2025 – Sunflowers, another successful sancocho, & nespolino cookies

6/15/2025: Today began in the mid 70s and warmed into the low 90s. Partly cloudy. Very stormy late afternoon.

6/16/2025: Today began in the low 70s and warmed into the high 80s. Quite cloudy in the afternoon with a little bit of rain.

6/17/2025: Today began in the mid 70s and warmed into the mid-90s. Partly cloudy. Quite warm.

6/18/2025:  Today began in the low 70s and warmed into the mid 90s. Cloudy afternoon allowed for slightly cooler temperatures in the late day.

6/19/2025:

6/20/2025: Today began in the mid 70s and warmed into the high 80s. Quite warm, humid, and sunny. Rain during the night.

6/21/2025: Today began in the low 70s and warmed into the high 80s. Slightly stormy afternoon (but not much rain at all).

Final Note: This past Saturday, I made an interesting type of cookie to share: Keto Nespolino Cookies. Theses cookies have a base of almond flour and are flavored with homemade loquat extract (Nespolino). They turned out very well, so I’m sharing the recipe here.

Keto Nespolino Cookies

Ingredients:
2-1/8 cups almond flour (chilled / frozen)
1/3 cup of Splenda
1/2 stick of salted butter (melted) (1/4 cup butter)
2 eggs
1 tbsp loquat extract (probably can use almond extract, too)
1 tsp salt

Instructions:
1. Mix everything together into a cohesive mass. (Hand works best.)
2. Place in fridge to chill (overnight is good).
3. Preheat oven to 350 F.
4. Spoon 1 tbsp scoops onto foil-lined baking tray.
5. Flatten to cookie shape with a fork (can make a cross-hatch pattern).
6. Bake at 350 F for 15 – 18 minutes.
7. Remove from oven and let cool for 5 – 10 minutes before eating.
This morning, I made almond cookies (front) and peanut butter cookies (back) to share at the Master Blend store. They all had great flavor and excellent texture.
