2/9/2025: Today began in the low 50s and warmed into the 80s. Quite sunny.

Lunch consisted of beef sausages accompanied by a green salad topped with slices of hard-boiled egg and avocado. That salad was drizzled with a mustard vinaigrette. El almuerzo consistía en salchichas de res acompañadas de una ensalada verde cubierta con rodajas de huevo duro y aguacate. Esa ensalada estaba rociada con una vinagreta de mostaza. 
This is a Mississippi style stew I prepared for the dinner of 2/9/2025. Este es un guiso estilo Mississippi que preparé para la cena del 9 de 2 de 2025. 
This afternoon I installed the last bolts on the roof of the Guesthouse. The moon was high in the sky. Esta tarde instalé los últimos pernos en el techo de Guesthouse. La Luna estaba muy alta en el cielo. 
Dinner consisted of a Mississippi-style casserole garnished with red cabbage and a slice of toasted pizza. All of this was accompanied by a green salad made by Padre. La cena consistía en un guiso estilo Mississippi adornado con repollo rojo y un trozo de pizza tostada. Todo esto estaba acompañado de una ensalada verde hecha por mi padre. 
A sliced red apple sprinkled with cinnamon and accompanied by a spoonful of Greek yogurt. Una manzana roja en rodajas espolvoreada con canela y acompañada de una cucharada de yogur griego.
2/10/2025: Today began in the low 60s and warmed into the 80s. Foggy morning followed by a sunny day.

Lunch consisted of a platter of sushi accompanied by a bowl of miso soup garnished with red cabbage, avocado and spinach. El almuerzo consistía en una bandeja de sushi acompañada de un tazón de sopa de miso adornada con repollo rojo, aguacate y espinaca.

2/11/2025: Today began in the low 60s and warmed into the high 70s. Foggy morning, partly cloudy day.
Lunch consisted of a Mississippi-style stew on a bed of green cabbage. All of this was accompanied by a green salad drizzled with a mustard vinaigrette. El almuerzo consistía en un guiso al estilo Mississippi encima de un lecho de repollo verde. Todo esto estaba acompañado de una ensalada verde rociada con vinagreta de mostaza.

This is a mansion I found during my expedition to Micanopy on the morning of 2/12/2025. Esta es una mansión que encontré durante mi expedición a Micanopy en la mañana del 12 de 2 de 2025.

Location: “Old Florida Café” For lunch, I had a Cuban sandwich with coleslaw. The coleslaw wasn’t great, but the sandwich was quite delicious. Ubicación: “Old Florida Café”. After returning home, I prepared the stew for dinner by seasoning the meat with spices and chopping onions and green peppers. Después de regresar a casa, preparé el guiso para la cena condimentando la carne con especias y picando cebolla y pimiento verde. 
Later, I worked on the roof of the Guesthouse. Más tarde, trabajé en el techo de Guesthouse. 
Dinner: A spring mix and green cabbage salad topped with the aforementioned meat (pan-seared), a wedge of Swiss cheese, avocado, and sour cream. La cena: una ensalada de mezcla primavera y repollo verde cubierta con la carne ya mencionada (dorada en sartén), un trozo de queso suizo, aguacate y crema ácida.

2/13/2025: Today began in the low 70s and warmed into the high 80s. Mostly sunny, but it rained for a brief time and began to cool at dusk.
On the morning of 2/13/2025, Padre and I worked on the roof of Guesthouse. We made a lot of progress and now I can move forward with the project. Lunch consisted of a fried mixture of eggs and leftover Mississippi-style casserole. This mixture was accompanied by a colorful salad made by Padre. Dinner consisted of flanken Wagyu ribs. These were accompanied by a green salad and a piece of toasted bread (made by Padre) topped with Swiss cheese. 2/14/2025: Today began in the mid 60s and warmed into the 70s. Mostly cloudy.

Lunch consisted of a fried mixture of eggs and leftover Colombian-style stew. This mixture was accompanied by a colorful salad topped with radish and carrot from the garden. El almuerzo consistía en una mezcla frita de huevos y sobras de guiso estilo colombiano. Esta mezcla estaba acompañada de una ensalada colorida cubierta con rábano y zanahoria del jardín. 
This afternoon Padre helped me for a few minutes to install some of the roof trusses. Esta tarde mi padre me ayudó por unos minutos a instalar algunas de las cerchas del techo. 
The Guesthouse roof now has all its trusses. Ahora el techo de Guesthouse tiene todas sus cerchas. 
Dinner: A piece of Wagyu round roast topped with cambozola cheese and accompanied by toast and a colorful salad topped with a type of root vegetable processed in China (which my brother sent us). All of this was accompanied by a horn of red wine and a bowl of sour cream for dipping. La cena: Un trozo de asado de ronda de Wagyu cubierto con queso cambozola y acompañado de tostado y una ensalada colorida coronada con un tipo de raíz procesado en China (que nos envió mi hermano). Todo esto estaba venía acompañada de un cuerno de vino tinto y un tazón de crema ácida para mojar.

2/15/2025: Today began in the low 60s and warmed into the 80s. Mostly cloudy morning followed by sunny afternoon.
These are the cinnamon puff pastries I made the morning of 2/15/2025. Estos son los hojaldres de canela que hice la mañana del 15 de 2 de 2025. 
Lunch consisted of a fried mixture of eggs and seasoned beef. This mixture was accompanied by a green salad drizzled with olive oil, balsamic vinegar and Cholula hot sauce. El almuerzo consistía en una mezcla frita de huevos y res condimentada. Esta mezcla estaba acompañada de una ensalada verde rociada con aceite de oliva, vinagre balsámico y salsa picante Cholula. 
I prepared these steaks for dinner. I first seasoned them with sesame seeds, black pepper, and salt and then pressed them down with a small plate. Preparé estos bistecs para la cena. Primero los condimenté con semillas de sésamo, pimienta negra y sal y luego los presioné con un plato pequeño. 
In the afternoon, Padre, Victor and I worked to replace the old catch chute with a new one. En la tarde, mi padre, Víctor y yo trabajamos a reemplazar la vieja rampa de captura por una nueva. 
After work, there was an excellent sunset. Después del trabajo hubo una maravillosa puesta de sol. 
Dinner consisted of the already-shown burger-steaks, pan-seared, topped with a mushroom and Swiss cheese mixture, and accompanied by a colorful salad made by Padre. La cena consistía en los bistecs ya mostrados, dorados en la sartén, cubiertos con una mezcla de hongo y queso suizo y acompañados de una ensalada colorida hecha por mi padre.

Final Note: One thing that I found surprising this week was how enjoyable the Ritsabittle was. Many of the past Ritsabittles were interesting, but they weren’t what I would call ‘enjoyable’, likely due to my breaking out of a strong box wrought over the course of decades and due to my searching for something (or someone?). This Ritsabittle was similar at the start – slightly uncomfortable due to my venturing out of a box that had begun to form about me* – but fortunately that discomfort disappeared very rapidly and was replaced by an actual enjoyment of exploration. I got to see very old trees, find an ‘elusive tower’**, and eat different food that I usually do not eat. I think I was right: One can aspire to explore all they want, but it can only cease being an aspiration with the act.
* I’m not sure if I felt this box forming about me, but I certainly felt when it began to fall away.
**The few people I found on the trails near Micanopy were looking for this ‘elusive tower’.

I especially liked learning about your midweek adventure… Tremendously tasty food no doubt and as for your final thoughts, to act is to live and while the results may not always be perfect it’s a lot better than just wondering what if.
