Lunch: A green salad topped with hard-baked eggs. I dressed the salad with olive oil, balsamic vinegar, salt, and black pepper. El almuerzo: Una ensalada verde cubierta con huevos duros horneados. Aderecé la ensalada con aceite de oliva, vinagre balsámico, sal y pimienta negra. 
Dinner: A London Broil encrusted with salt and coffee and reverse seared. We utilized a little bit of arugula as a garnish in this photo. La cena: Un London Broil incrustado con sal y café y dorado al revés. Utilizamos un poco de rúcula como guarnición en esta foto. 
The plated dinner: Two pieces of the aforementioned roast accompanied by a green salad made by Padre and a bowl of sour cream for dipping. The coffee crust and the cream combined quite well with one another. La cena emplatada: Dos trozos del asado ya mencionado acompañados de una ensalada verde hecha por mi padre y un tazón de crema ácida para mojar. La corteza d café y la crema combinaron muy bien.

This morning, I made butter from the two gallons of milk that we milked from cow #2312. There was a little bit of a mess, but the result was worth it. This is the little heifer calf for which we searched almost two hours in the afternoon of 7/29/20024. Padre found her in some feeds to the south of the old milking barn. Esta es la ternerita que buscamos por casi dos horas en la tarde del 29/7/2024. Mi padre la encontró en unas malezas al sur del antiguo granero de ordeñar. 
Dinner: A Belgian Blue burger-steak encrusted with chiltepin, salt, and coffee and drizzled with a little bit of lime. This steak was reverse-seared and accompanied by a cabbage and carrot salad. La cena: Un bistec de res molida de azul belga incrustado con chiltepín, sal y café y rociado con un poco de limón. Este bistec estaba dorado al revés y acompañado de una ensalada de repollo y zanahoria.

The morning of 7/30/2024: I helped Madre in her kitchen container. We installed some outlets and a shelf. La mañana del 30/7/2024: Ayudé a mi madre en su contenedor cocina. Instalamos algunos enchufes y un estante. 
In the afternoon of 7/30/2024, there were many egrets in the easternmost pasture of the farm. En la tarde del 30/7/2024, había muchas garcetas en el campo más oriental del rancho.

Dinner: Some Wagyu short ribs seasoned with salt, black pepper, coriander, and Worcestershire sauce. These ribs were reverse-seared and accompanied by a green salad made by Padre. For dipping the beef, we used homemade barbecue sauce, and to drink we had two horns of red wine. La cena: Unas costillas de Wagyu sazonadas con sal, pimienta negra, cilantro (semilla en polvo) y salsa inglesa. Estas costillas estaban doradas al revés y acompañadas de una ensalada verde hecha por mi padre. Para mojar la carne, usamos salsa barbacoa casera y para beber, bebimos dos cuernos de vino tinto.

Lunch consisted of a lettuce and cabbage salad topped with avocado and leftover Mississippi pot roast reheated by Padre. El almuerzo consistía en una ensalada de lechuga y repollo cubierta con aguacate y sobras del asado de Mississippi recalentadas por mi padre.

This afternoon, Madre helped me with the installation of an internet antenna (for Starlink). It took very little time but now my internet is functioning quite well. Esta tarde mi madre me ayudó con la instalación de una antena de internet (para Starlink). Tomó muy poco tiempo, pero ahora mi internet está funcionando bastante bien. 
Dinner: A fullblood Wagyu sirloin tip steak. This steak was seared in a skillet and accompanied by a baked potato and a cabbage & carrot salad. I topped the steak and the potato with homemade butter. All of it was delicious. La cena: Un bistec de ronda de Wagyu de pura sangre. Este bistec estaba dorado a fuego vivo en una sartén y acompañado de una papa asada y una ensalada de repollo y zanahoria. Cubrí el bistec y la papa con mantequilla casera. Toda estaba muy rica.

This morning, I thinly sliced a F1 Wagyu flap steak for searing on a skillet. I also seasoned the meat with salt and black pepper. Esta mañana corté un bistec de falda de Wagyu F1 en rodajas delgadas para dorar en una sartén. También sazoné la carne con sal y pimienta negra. 
A salad of romaine lettuce, red cabbage, avocado, banana peppers, and the beef already shown in the prior photo (after searing it in a skillet). Una ensalada de lechuga romana, repollo rojo, aguacate, pimientos amarillos enfrascados y la carne de res ya mostrado en la foto anterior (después de dorarla a fuego vivo en una sartén).

8/2/2024: Today began in the mid 70s and warmed into the 90’s. No rain in spite of looking like it would.
For lunch on 8/2/2024, I cooked scrambled eggs with chiltepín, fresh rosemary, and mozzarella. These were accompanied by a green salad made by Padre and dressed by Madre. Para el almuerzo del 2/8/2024, cociné huevos revueltos con chiltepín, romero freso y mozzarella. Estos estaba acompañados de una ensalada verde hecha por mi padre y aliñada por mi madre.

A Wagyu F1 ground beef steak topped with homemade butter and accompanied by a spring mix salad, tomato, carrot and pecorino cheese. For dipping, we used a little homemade barbecue sauce. Para mojar, utilizamos un poco de salsa barbacoa casera.

Lunch consisted of a fried mixture of eggs and leftover beef. This was topped with a little bit of Cholula hot sauce and accompanied by a green salad made by Padre. El almuerzo consistía en una mezcla frita de huevos y sobras de res. Esta estaba cubierta con un poco de salsa picante Cholula y acompañada de una ensalada verde hecha por mi padre. 
Some vines growing on the fence at the west side of the central barn. They are called Virginia Creeper. Unas enredaderas creciendo en la valla del lado oeste del granero central. Se llaman Virginia Creeper. 
Dinner: A Belgian Blue burger steak seasoned with salt and black pepper and seared on a skillet. It was topped with homemade butter and accompanied by a salad of spring mix, tomato, and pecorino cheese. La cena: Un bistec de res molida de azul belga sazonado con sal y pimienta negra y dorado a fuego vivo en una sartén. Estaba cubierto con mantequilla casera y acompañado de una ensalada de mezcla primavera, tomate y queso pecorino.

Final Note: From an outsider’s perspective, it may seem that progress has been slow on Guesthouse as of late. That is because right now I am in a planning phase. This week, I calculated (and found) the number of exterior doors & windows that will be needed, and I calculated the amount of wood that will be used to frame those doors & windows. The intention is to make a large order from the store to reduce overall shipping costs and waiting. A picture of the file I’ve been working on is included below.
