Week of May 5, 2024 – Tree-clearing, arepas, olive oil, & banana puff pastries.

5/8/2024: Today began in the high 60s and warmed into the mid 90s. Mostly sunny.

5/10/2024: Today began in the low 70s and warmed into the high 80s. Slightly rainy in the morning.

5/11/2024: Today began in the low 60s and warmed into the high 70s. Mostly cloudy.

Final Note: Today is Mother’s Day 2024 (5-12-24), and I’ve utilized it as an opportunity to experiment in the creation of some puff pastries (pastelillos de hojaldre). I did one normal batch, but for the other, I added a mashed banana instead of sweetener & water. The recipe is as follows, but note that we have yet to taste it. Results will be recorded in the next week’s post.

Ingredients:

  • 1 ripe banana
  • 3/4 to 1 cup all purpose flour (this depends on banana size… the larger the banana, the more flour that is needed)
  • 1 stick good butter
  • Pinch of salt
  • Half a bar of 88% dark chocolate

Instructions: (Precooking note: Freeze butter & store flour in the freezer. Refrigerate banana.)

  1. Preheat oven to 400 F.
  2. Put flour in bowl, grate butter, add mashed/grated cold banana, and add pinch of salt.
  3. Mix ingredients and place in freezer or fridge to rest for about 15 minutes.
  4. Flatten dough on floured surface, fold it on itself like a letter that is to be placed inside an envelope,
  5. Rest the dough for about 15-30 minutes (this prevents the gluten development that results in tough pastries)
  6. Flatten dough, cut into squares, and add one square of chocolate to each square dough.
  7. Fold or roll each section of dough around each piece of chocolate.
  8. Place pastries onto parchment paper lined sheet pan, and place pan in oven for 5 minutes.
  9. Reduce oven temperature to 325 F and allow pastries to bake for 25-30 more minutes or until lightly browned.
  10. Allow pastries to cool to room temperature, and enjoy.

Observations: The dough for these banana puff pastries does not seem as light as the dough I typically make. I attribute this to my not resting the dough the second time (as is included in the recipe above). Also, I think I would puree / mash the banana more evenly next time so there are not any chunks. One thing I do like about the look of these pastries, is that they have browned slightly more than the Splenda-sweetened pastries. This is likely due to the presence of natural sugars in the ripe banana. My first impression is that I would cook these again. The taste test later tonight shall tell us more.

  2. Again, I’m astounded as to how much can fit into one week. Definitely some progress made and even more so there were certainly many tasty repasts, much to appreciate.
