Lunch of 8/6/2023: A fried mixture of chicken, mozzarella, tomato sauce, and eggs accompanied by a green salad made by Padre and dressed by Madre. El almuerzo del 6/8/2023: Una mezcla frita de pollo, mozzarella, salsa de jitomate y huevos acompañada de una ensalada verde hecha por mis padres.

A Belgian Blue burger-steak topped with a little bit of sour-cream & horseradish sauce. The beef was accompanied by a salad of cucumber, red cabbage, green cabbage, tomato, and olive in a tangy vinaigrette. The main course consisted of roasted chicken breast in a chili sauce. It was topped with carrot and radish and accompanied by a bowl of black beans. The beautiful dinner of 8/7/2023: I ate three plates of food, and this was my favorite one. It consisted of a large salad, some roasted vegetables, and some pan-seared fish. This is the flower of the yellow oleander (but really it is orange). I think that this plant is very poisonous. Esta es la flor de la adelfa amarilla (pero realmente es naranja). Creo que esta planta es muy venenosa.

The first plate of lunch consisted of chopped pork (shwarma), falafel (tasted of cumin), and a dressing of Greek yogurt, lemon, and dill. El primero plato de almuerzo consistía de puerco cortado (shawarma), falafel (supo a comino), y un aliño de yogur griego, limón y eneldo. 
A salad of various lettuces, tomato, shredded carrot, and sliced radish in an Italian vinaigrette. Una ensalada de varias lechugas, tomate, zanahoria rallada, y rábano en rodajas en una vinagreta italiana. 
This is a little bit of tuna ceviche topped with diced jalapeño, cilantro, and sliced avocado. I squeezed some lime over this dish. Este es un poco de ceviche de atún cubierto con jalapeño cortado en cubitos, cilantro, y aguacate en rodajas. Yo exprimí un poco de lima sobre de este plato.

One of three plates of food that I ate for the dinner of 8/8/2023. There was much salad with smoked salmon, tortellini filled with cheese a piece of pork in a cream sauce, and a grouper & olive roll. Había mucha ensalada con salmón ahumado, tortellini llenado con queso, un pedazo de puerco en una salsa de crema, y un rollo de mero y olivas.

Morning of 8/9/2023: This is an iguana that we found during the morning walk. La mañana de 9/8/2023: Esta es una iguana que encontramos durante del paseo matutino. 
I don’t know for sure, but I think this is another type of Chinese Ixora. No sé de seguro, pero creo que esta es otro tipo de la Ixora chinensis (Chinese Ixora).

The second plate consisted of seafood: fillets of fish, a slice of squash stuffed with octopus, and a bowl of ceviche topped with jalapeño and avocado. El segundo plato consistía de mariscos: filetes de pescado, una rodaja de calabaza rellena de pulpo, y un tazón de ceviche cubierto con jalapeño y aguacate.

One plate of the three plates of food that I enjoyed during the dinner of 8/9/2023. There was much seafood, excellent chorizo (seasoned almost perfectly), and two tamales (one with green pepper and one with chicken and salsa verde). Also, I tried a tamal tonight that tasted like bubblegum. It is the only thing this trip that I was not able to eat. Un plato de los tres platos de comida que yo disfruté durante la cena de 9/8/2023. Había muchos mariscos, chorizo excelente (sazonado casi perfectamente), y dos tamales (uno con pimiento verde y uno con pollo y salsa verde). También yo probé un tamal esta noche que supo a chicle. Esa cosa fue la sola cosa en este viaje que yo no pude comer. 
Dessert consisted of two macaroons accompanied by some slices of pineapple. El postre consistía de dos macarrónes con unas rodajas de piña. 
After dinner, Padre and I played cards while Madre and my brother were playing Dr. Mario. Después de la cena, mi padre y yo jugamos cartas mientras mi mamá y mi hermano estaba jugando Dr. Mario.
8/10/2023: Today began in the mid 80s and warmed into the mid 80s. Mostly sunny until the evening when there was nearby storms.

For the main course, I ordered the swordfish fillet on a bed of roasted vegetables. Para el plato principal, yo pedí un filete de pez espada en un lecho de vegetales asados.

A gyro with chopped beef, cucumber salad, onions in vinegar, and a dressing of Greek yogurt, lemon, and dill. Un gyro con res cortada, ensalada pepino, cebollas en vinagre, y un aliño de yogur griego, limón, y eneldo. 
A salad of smoked salmon, raw tuna, and a dressing of tomatoes in a vinaigrette and a little bit of Caesar. Una ensalada de salmón ahumado, atún crudo, y una aliño de tomates en una vinagreta y un poco de Caesar. 
Thai Shrimp. The sauce used in this plate was both sweet and spicy. Camarones de Thai. La salsa usada en este plato estaba dulce y picante. 
A dessert of Greek yogurt and a little bit of lemon covered with cherry sauce. Un postre de yogur griego y un poco de limón cubierto con una salsa de cereza.

The next dish was a goat cheese salad. El próximo plato fue una ensalada con queso de cabra.

Final Note: It is 11:43 on the evening of 8/13/2023. Vacation has come to an end, but it was a tremendous experience whilst it lasted. Great food, great rest, and terrific time with Padre, Madre, and my brother.
Reading this the night after we returned, what a great experience… when the four of us are together it’s brings life to a level that defies words. Thanks for sharing this and your life with me.
